Banana Crumb Muffins

Tuesday, December 9, 2014

Let me share with you, wonderful readers, my go-to crumb top banana muffin recipe that's just so good! I used to make this goodies back in San Diego whenever we have bananas that are about to get over-ripe, which is just perfect (and easy to mash! haha!). Sometimes I would just make banana loaf with nutella or some nuts but I love muffins more because they're easier make and  they bake faster. Here are the rest of the ingredients:

1 1/2 cups all purpose flour
1 tsp baking powder
1/2 teaspoon salt
3 ripe bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup melted butter
1/3 cup brown sugar
2 tbsp all purpose flour
1/8 teaspoon ground cinnamon
1 tbsp butter

Preheat your oven to 375 degrees and grease your muffin pan  or line with cupcake liners.
Give your bananas some good-lovin'-mushin' :)
Mix together the mashed bananas, sugar, egg and melted butter
In another bowl, mix together the flour, baking powder, and salt.
Stir the banana mixture into the flour mixture.
 Mix until they're all well-blended.
Spoon the batter into the prepared muffin pan.
In another bowl, mix together the brown sugar, 2 tablespoon of flour, and cinnamon.
Cut in 1 tablespoon butter until the mixture looks like.....
 .. this :)
Sprinkle the crumb topping on top of the muffins.
Bake the muffins in the preheated oven for 18 to 20 minutes, until a toothpick inserted in the center of the muffin coms out clean.
This cutie's been calling out to me every now and then the whole time I was in the kitchen! :)
 And voila!

Look at that yumminess! Enjoy! :)
